Dairy products are great- cottage cheese and Greek yogurt are both high in protein. Tofu and tempeh are delicious and can be used in a ton of dishes where meat would have been. Cheese, eggs, nuts and beans are good too.
What kind of meat were you eating? I like using soy grounds (check your freezer section for Boca crumbles) for pasta sauce, chilli, etc. Quorn make some excellent vegetarian "chicken" alternatives.
That's a very good question.... Beans, nut butter and nuts give you all the protein that you need... if you are not vegan then you can enjoy greek yogurt and milk for protein. Remember that most people eat more protein that their body needs... keep you protein intake between 50 - 60 g a day.
Try Almond butter... I prefer it over Peanut butter. If you are eating nuts make sure you eat them unsalted.. otherwise you would be consuming tons of sodium.
