Warm Heirloom Tomato Bread

     I'm not sure you can even call this a recipe but you can call it a simply delicious chilly weather dinner.  Yes, dinner.  Forrest questioned it too.  Anyway, heat a skillet with extra virgin olive oil and brown two pieces of french bread (both sides).  Once the bread is crispy and golden, take it out and saute fresh spinach until wilted.  Cover bread with a slice of your favorite cheese - I used pepper jack because it was my only option without walking to the grocery store.  It turned out to be a tasty option and gave the dish a spicy kick.  Broil the cheesy bread in the oven until melted.  Pile high with spinach and heirloom tomato wedges.  Drizzle with more olive oil, sprinkle with salt/pepper, and serve warm.     However you may be spending it, have a great weekend!
