Over the past year I have really grown to love tofu. People that turn their noses don't know what they are missing! It can be baked, fried, used in sandwiches, turned into a "cream" sauce, and even go into a tasty, sweet pie. It is so versatile, going from breakfast to lunch, dinner, and even dessert.
I recently tried the Lemon Herb Tofu from Vive Le Vegan. This was another tofu recipe to add to the many that give it such a good reputation. The lemon and herb flavors infuse into the tofu without even having to be pressed or marinated first. Included in the meal was baked almond brown rice and some sweet green peas.
