i made some great, very easy vegetarian tacos the other night. Perfect for a weeknight meal. I hydrated some TVP flakes, then heated the TVP (drained, but still moist) over medium heat in a skillet. I threw in a little soy sauce, just for color and flavor (I tend to always do this when cooking TVP). Then, I added a Taco seasoning packet (I know, cheating, but it was a Tuesday!). Simmer that together until hot, while slicing some lettuce and tomatoes. Place hot taco "meat" in a tortilla or taco shell, top with lettuce, tomatoes, salsa, and fat free, vegetarian refried beans. Cheese and sour cream optional. Mmm. Mmm. Mmm.
