
This is a pasta dish that I decided to try. I found a recipe on vegweb that I liked, but in the middle of making it, I couldn't get the jars open for two main ingredients and my husband was not home yet, so I just left them out. Pathetic, isn't it? Anyway, it is just whole wheat pasta tossed with fire roasted tomatoes, capers, oregano, and some bay leaf that were simmered together with some garlic. I sprinkled Soymage vegan parmesan on the top.
P.S. In case you were wondering, the two main ingredients that we are missing here are black olives and artichoke hearts!
