Tabbouleh with a difference

This is a soothing, nourishing salad and can be refriegerated for a week

Soak 1 cup bulgar wheat in 1 2/ 3rd cup boiling water for 45 mins, till the liquid is absorbed and the wheat gets tender

Add the following ingredients and mix well

- 2 spring onions, chopped

- 1 small cucumber, peeled and chopped

- 1 cup pomogrenate seeds

- 1 large tomato, diced

- 2 tblsp. toasted sesame seeds

- 1/2 cup parsley or combinataion of mint and parsley, finely chopped

- 2 tblsp. olive oil

- 2 tblsp. orange juice

- 1/2 tablespoon grated orange or lemon zest

- 1/ 2 tsp ground all spice

- Kosher salt and ground pepper to taste

Leave it in the refrigerator for atleast 2 hours and enjoy .....

Sounds delicious. I would think this would taste great with fish on top to make a meal of it. However, I'd probably leave out the pomegranite seeds. They are so expensive and hard to get out of the fruit! But that's just me...
