Stuffed Peppers were on the menu tonight. The filling mainly consists of quinoa, black beans, mushrooms, tomato sauce, chili powder, and a touch of maple syrup. The recipe is from Vegan with a Vengeance. The filling is extremely easy to make. In fact, for tonight's dinner all I had to do was thaw some of it out of the freezer because I had made some ahead of time a few weeks ago. With that we had chunky mashed potatoes with some of the pepper "gravy" that was in the bottom of the pan spooned over the top.
