Strap yourselves in.....

This is going to be one heck of a post. I have been unbearably swamped with blogging lately! Not my own....but trying desperately to keep up with everyone else's (thanks Vegan Mofo!) And I've been failing dismally, so if I haven't left a comment in a while, I'm sorry! I am getting there....just really slowly (like slower than snails pace!).

I have also been majorly slack with my blogging. I think I'm having the food blah's again (oh noes!) I really haven't been feeling like much at all. I have been eating though! So here are some of those Summer Eats I promised 2 posts ago......

First up Avocado Potato Salad. This one wasn't from Vegan Brunch and I kind of half copied something off the interwebs and made stuff up as I went. It was nice, but to be honest I'm not sure I actually like avocado on potato (blasphemy I'm sure!). It really made my avocado allergy flare up too which made me sad :(

Then I tried Beetroot Salad. I wish I could remember where I got the recipe for this from because it was yummy! Alas, I can't :( It had beets, carrots, bean shoots and I think some kind of lemony coriander dressing. Even the UnVegettes liked it! I'll have to hunt it down so I can share (the perils of not blogging enough!)

I discovered a link for Shittake Bacon on Miss V's Blog a while ago and decided it would be perfect for a caesary style salad. Sadly I was not a fan of Shittake Bacon, as much as I wanted to be but it looked nice :P

 I made some BBQ Seitan Burgers from Vegetarian Times. I left out the Chipotles because I couldn't find smoked Jalapeno's plus I'm a wimp. I threw in 2 Tbsp of Heinz Spicy Red Sauce instead and a little smoked Paprika. I also left out the chilli powder and halved the cumin. They were pretty yummy! I served it up with a quick pasta salad and steamed broccoli.

Last time I went to my Organics Store I found Syndian Burgers in the freezer section. I was super excited. They're pricey but soy free and it's always nice to have something quick and easy you can eat on occasion. They were nice, but I can't say I loved them. Mine doesn't look at all like the one on the website either! This one was the Aussie Burger. Served up with lettuce and some roasted taties. Mmmm taties.

I grabbed a whole heap of fresh tomatoes the other day and decided to whip up Vegan Yum Yums Super Quick Basil Cream Tomato Sauce. I usually use canned tomatoes but the fresh one's are amazing. Served on gluten free spaghetti.

I made the Courico Tacos with Grilled Pineapple Salsa (minus the onion) from Vegan Brunch again. I didn't like them the first time. I thought the spices were over powering. I halved them this time and it was perfect deliciousness!

Kitteh (thanks!) sent me a link to some recipes from Alicia Silverstone's "The Kind Diet" which I have on order. The Bok Choy with Gomashio was really calling to me, plus I finally had a use for the Umeboshi Plum Vinegar that I've had for months and not known what to do with! This was delicious, but next time I'd eat less stems!

Again, mine doesn't look nearly as pretty as hers :( But it was still tasty and that's what counts right?

I made the Southern Fried Tofu from Vegan Vittles after seeing it mentioned on the PPK. I believe this is the recipe here and of course I used chicken style seitan. Mmmm fried yummies!

One night I felt like bourghul. I decided to make a pilaf. I threw in lemon zest, lemon juice, bourghul (bulgur for you overseas folk reading), yellow capsicum, celery, some cooked onion, a few handfuls of spinach, salt and pepper and a whole lot of sumac. It was nice and 2 of the UnVegettes ate a whole plate full, but it needs a little something before I'd post an actual recipe.

Last but not least, yesterday I decided to make some gluten free vanilla cupcakes. I altered a couple of different recipes. They're vegan and they're nice, but to be honest, they came out more like Vanilla Muffins than cupcakes :/ The lemon icing is delicious with them though!
