Sometimes things are worth repeating. That’s certainly the case for my roasted artichokes , which I’ve been having non-stop since I made Spanish tapas for the girls. I will admit, there was a time in my life when I was scared of cooking artichokes, I mean, have you seen them in their natural form? They can be intimidating …that is until you learn how to make them. They’re absolutely delicious & in my opinion highly addicting.
This recipe calls for jarred artichoke hearts so the prep work is taken care of, all you have to do is roast them. These are so easy to make it’s ridiculous, seriously set it & forget it type of dish. Plus this dish is vegan, gluten free & super healthy, you really can’t go wrong with these roasted artichokes. Let’s get started!
3 14 oz jars of artichoke hearts
2 tablespoons olive oil
4 garlic cloves, minced
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
Salt & pepper, to taste
Preheat oven to 375 degrees. In a bowl, combine artichoke hearts, olive oil & garlic then place on a cookie sheet on a single layer. Roast artichokes for 40 – 45 minutes until golden brown. Add lemon juice, parsley, salt & pepper then serve hot & enjoy. Buen provecho!
