Recipe: Warm Strawberry Compote with Vanilla Coconut Ice Cream

Ohh…yummy.  This is one of my absolute most favorite dishes to make, for two reasons: 1. Its super super easy to make. 2. It combines an elegant display of warm ooo-ee-gooeyness with creamy chilly-willyness.  Serve this dish as a sophisticated end to a decadent vegan meal in a big wide-mouth martini glass with a garnish of fresh mint.  Or, just pile it in a bowl and enjoy while watching Dumb and Dumber , your choice.  Hope you enjoy! 1 red apple, peeled, cored and diced
1 1/2 cups frozen strawberries
1 tbsp agave nectar
1/2 cup water
1 tsp cinnamon
Combine all ingredients in a medium sized sauce pan.  Bring to a boil, reduce heat to medium-low and simmer until water is absorbed and compote is cooked down.  Serve over your favorite Vegan Vanilla Coconut Ice Cream warm or cold.
