Recipe: Romaine Lettuce with Parmesan-Tahini Dressing

Perfect for a hot summer day or served with warm polenta and tomato soup. Romaine lettuce is also a great alkalinizing lettuce which helps bring balance to your body!
1/4 cup well-stirred tahini
2 tablespoons water
3 tablespoons fresh lemon juice
1 clove garlic, minced
1/2 cup parmesan, grated
2 heads romaine lettuce, rough chopped
1/2 cup cherry tomatoes, halved
Black pepper and celtic sea salt to taste
Parmesan cheese, garnish
In a food processor, combine tahini, water, lemon juice, garlic, and parmesan. Puree until smooth. In a large bowl, toss dressing with romaine lettuce, black pepper, and salt. Place on plate and top with cherry tomatoes, parmesan cheese and croutons if using.
