Recipe: Avo-Cucumber-Orange Salad

What to eat on a warm fall afternoon…hmmm…Well look no further!  This salad is perfect as a side dish to your favorite sandwich, Tempeh recipe , or as a simple little snack.  Feel free to add any of the optional ingredients listed below.  And, best yet this recipe takes only 10 minutes to prepare!

Serves 2

1 medium Avocado, sliced into small cubes

1 Orange, peeled and cubed

1/2 large Cucumber, washed and diced into small cubes

3 tbsp White Onion, diced into small cubes

1/2 tsp Celtic Sea Salt

1/2 Lime, juiced

2 tbsp White Grape Juice, Apple Juice, or any other light juice


Combine all ingredients in a medium sized bowl and toss well.

Optional Add-Ins:

1 tbsp Hemp Seeds

1 tbsp Pumpkin Seeds

1 Apple, cored and diced
