Rachel’s Recipes: Butternut Squash with Baby Spinach

I love Wegmans.  I think I may have hinted at that already.  A few years ago, I discovered this recipe for Butternut Squash with Baby Spinach in their monthly Menu magazine.

I already love butternut squash, so any recipe I can find that makes it even better is fine with me.  And this recipe is easy, too.  Wegmans conveniently sells butternut squash already peeled and chopped, so this recipe becomes even easier if one springs for this extra time saver.

Variations: use regular extra-virgin olive oil instead of Wegmans basting oil, use fresh cranberries instead of dried, and cook the fresh cranberries with the squash so they burst and become nice and tender themselves.  This is equally good without the cranberries; just the squash and the baby spinach make a great side dish.

I’ve also roasted fresh garlic cloves alongside the squash, chopped them after roasting, and tossed them with the squash, spinach and cranberries.
