It’s pumpkin season & I’m celebrating! Since we don’t really get to experience Fall in Florida I like to celebrate my favorite season by over indulging in all things pumpkin. Pumpkin spice lattes . Pumpkin tortes . Pumpkin cheesecake . I will confess, when pumpin puree cans hit the grocery store I stock up for the season; I’m a pumpkin-a-holic & I’m not ashamed. Luckily for me, my coworkers share my love of pumpkin. Every year in October we have Pumpkin Tuesdays, where we bring pumpkin treats to share. Yesterday was my turn to bring a pumpkin creation & I must say, this one is the best one I’ve made yet. Let me introduce you to Pumpkin Spice Croissants, a little taste of Fall heaven. They’re flaky, creamy & full of the spices of the season!
Ingredients (makes 8 servings)
1 crescent rolls package
1/4 block fat-free cream cheese (about 2 oz)
1/2 cup pumpkin puree
3/4 teaspoons pumpkin spice
1 1/2 tablespoons truvia (you can use real sugar too)
For the topping: 2 tablespoons sugar + 1 tablespoon pumpkin spice
Preheat oven to 375F degrees. Roll out crescent roll package & cut out 8 triangles then set aside.
In a blowl, beat together the cream cheese, pumpkin puree, truvia & pumpkin spice until fully integrated. Spread pumpkin mixture on top of every crescent triangle & roll, from the the thickest part to the thinnest.
Mix together the topping mixture of sugar & pumpkin spice & roll each croissant in it. Place croissants on cookie sheet & bake for 12 – 14 minutes until dough is cooked through.
