Challenge yourself to eat a lunch filled with vegetables at least once each week. The GSB cafeteria has a great salad bar that you can load up for ~$6.00. Salad, cucumbers, peas, carrots, cauliflower, tofu, the list goes on. It's very tasty and a great way to add those veggies that so many of us are guilty of neglecting.
I've always heard that lunch should be your heaviest meal of the day, so I used to stay away from salads and opt for stuff that was a little more...well, heavy. But I've found that if you vary it up and heap on the veggies, a salad can be extremely hearty and filling while being very nutritious as well. My favorites: corn, kidney beans, garbanzo beans, snow peas, carrots, and broccoli. Yum--thinking about all those veggies is making me hungry. :)
