This is a recipe that we tried as a family recently, and it went down really well with everyone, including the kids and even the baby. So I thought I’d post it on here.
Lentils and Rice with Caramalized Onions and Spiced Pita Crisps is from page 117 of Veganomicon – The Ultimate Vegan Cookbook.
It was pretty simple to make….
Roast 3 chopped onions, in olive oil, in the oven for 30 minutes, stirring often. You want them really dark and quite crispy at the edges.
Boil 1 cup of basmati of rice in water with a cinnamon stick, ground cumin and allspice. Then cover and simmer for 15 minutes. Uncover and add 1 cup of red lentils. Cook on low for 45 minutes until all liquid is absorbed.
Once cooked remove the cinnamon stick and mix in the onions, drizzling on any remaining olive oil from the pan as well.
This makes real vegan comfort food. I could eat it every night. Its just warming, and comforting and yum!
With it I made Spiced Pita Crisps, from the same page of the recipe book. It’s so simple to do. Basically you split some pittas in half (eg through the middle for extra thin crisps), and cut into two, then brush them with olive oil and a seasoning of choice. I used paprika, but you could use garam masala, garlic powder or whatever. Bake for 8-10 minutes until crisp, but before burning! They are great for dipping into the rice and lentils.
I made double the recipe and had left overs. So the next day I turned it into a rice and lentil style bubble-n-squeak. It was delicious! I just heated a little olive oil in the pan, tipped in the leftovers and cooked it through, mooshing it into a sort of large pattie. Then I put it under the grill with a little cheese on. Me and my 13 year old daughter pigged our faces on it! Yum yum.
