The PCC grocery store, below our building, makes a delicious Indonesian Rice Salad. I wanted to replicate the salad, and fortunately, it came out tasting even better. It is so delicious, almost as delicious as my bean salad, which I will make soon!
1 3/4 cup dry long rain brown rice 1 cup raisins 1/2 cup cashews 1 yellow pepper 2 scallions
3/4 cup orange juice 1/4 cup canola oil 1 tbsp sesame oil 3 tbsp soy sauce 2 tbsp lemon juice 2 tbsp white wine 3 garlic cloves
1. Wash rice thoroughly for 30 seconds under cold water. Bring rice and 3 1/2 cups of cold water to boil and then reduce and simmer for 45 minutes. I like to add a bit of butter and salt to my rice, but that is optional.
2. Once rice is done, cool in the refrigerator for 30 minutes. Then add raisins, cashews, yellow pepper, and scallions.
3. In a blender mix, orange juice, canola oil, sesame oil, soy sauce, lemon juice, white wine, and garlic. Mix with rice and serve.
