I had a can of white kidney beans in the cupboard and was unsure what to do with them. I found this recipe on allrecipes.com, then adapted it to fit the ingredients I had. It was soooo good. And really healthy, too.
Kidney Beans Recipe INGREDIENTS
* 2 tablespoons olive oil * 4 cloves garlic, minced * 1/2 red onion, chopped * 1 tablespoon cumin * Curry powder to taste, and some red pepper flakes, to taste (both i just threw in because I had them, but they totally worked with it)
* salt to taste * ground black pepper to taste * 1 (16 ounce) can kidney beans, with liquid * 1 (15.25 ounce) can whole kernel corn, with liquid
1. Heat the olive oil in a skillet over medium-high heat, and cook garlic and onion until onion is tender. Stir in the green bell pepper, and cook until tender but firm. Season with cumin, mustard, cayenne pepper, salt, and black pepper. 2. Stir the kidney beans with liquid and corn with liquid into the skillet. Bring to a boil, reduce heat to medium, and continue cooking 20 minutes, stirring occasionally. Serve immediately over rice, or plain.
This recipe needs some work. Green pepper, cayenne pepper and mustard were not listed as ingredients, but show up in the recipe. No measures are given. The recipe lacks cohesiveness - it is not greater than the sum of its parts.
