I know this is a real bland picture but this is the roasted garlic and white bean soup from Vegan with a Vengeance. We don't have soup very often but this was very easy to make. The only annoying part was getting the roasted garlic bulbs out of their pouches. Be forewarned that if you don't love garlic then you won't care for this soup because it is super garlicky. Because the roasted garlic in the soup wasn't enough for us we had garlic bread on the side. I took italian loaf bread and toasted it until golden. Then I rubbed fresh garlic all over the pieces, brushed them with some olive oil, and seasoned with salt and pepper. Delicious!
