Here are some of my eats for from Sunday through to Wednesday, today. I didn’t take photos of everything I ate, but it was mainly random munching.
Sunday, 5.10.09
Earlier in the week I made focaccia. I took the last 1/3 of the bread, cut ‘em up into about 4 to 5 inches and ate them as mini tofu and mayo sandwiches. SOooO good! Focaccia bread is so easy to make. I can’t believe I didn’t make it as often!
Tofu batch for the week to toss into salads, in between sandwiches, stir fries, anything you name it!
strawberry, mango, pineapple and banana fruit shake

Monday, 5.11.09
Banh Cheo. I’ve made this dish many times, so I am going to skip the description. If you’d like a full description email me.

Trip to Ben & Jerrys. I got the butter pecan–my FAVORITE ICE CREAM IN THE ENTIRE WORLD!

Tuesday, 5.12.09
Banana oatmeal with a spoonful of Barney Butter. After making my own almond butter, I find that Barney Butter is a little too salty for me. I love the creamy consistency, but the flavor has just dwindled for me a bit. I know weird. I remember the first time I tried it, I was in LOVE. I guess it takes a little bit getting used to again.
