Just an update here on some food that I have thrown together recently to prove that I am still in the kitchen, even though I have been feeling under the weather.
Here is some Mac Daddy (Veganomicon) with some muscles from brussels. I mean, roasted brussels sprouts.
On Sunday, we had Punk Rock Chickpea Gravy (VWAV) over mashed potatoes that I mixed in with some kale! It added interesting texture and flavor and it is a good way to sneak in a healthy green; smother it with gravy...
Last night, I was feeling in the mood for soup but we had no fresh root vegetables to make a good one so I literally threw this together just for something warm and easy. It is a peanut noodle soup, I guess you could call it that.
It was super easy. I put some water in a pot and added some "not chickn" bouillon. I got that heating up and then I melted in some peanut butter, minced ginger, minced garlic, and soy sauce. I might have added some pepper, I don't remember. Then I cooked thin spaghetti in it until it was done. The noodles were scooped up into the bowl and covered with some of the peanut broth. It was garnished with green onions, sesame seeds, and some hot sauce. It was really good for something I just threw in a pot and Phil even requested that I make it again. Success!
