Not to whine or ramble, but my head is in an err…poor place (ie since Thanksgiving, with my A Weighty Issue Post) so I’m trying to focus on the holidays and family, so bare with me as food blogging might take a back seat.
Last night I finally decided to use the Portabello Mushrooms Mom bought last week for mine and Dad’s dinner! I stuffed mine with the rest of my mushroom Couscous and some chickpeas, then topped it off with a bit of Marinara Sauce and some Artichoke Hearts…it was almost like a pizza, but spazzed out.
Too bad the mushroom got pretty thin while roasted and when lifted off the baking sheet, almost everything fell off.
Still tasted great!
My Dad had two medium sized ones (I had the mega one) and I stuffed his with leftover Japanese white rice, a boca burger, cheese, topped with marinara sauce and more cheese. See, his is even more like a pizza!
I was thrilled for this morning since I knew I was going to make Oats In A Jar with the bit of PB I had leftover in this jar…
No worries, I bought another jar. How could I ever live without PB?
Sadly I had to use quick oats (I hate quick oats; wayyy too pasty) but alas, I used a 1/3C with cinnamon and water, mixed in a diced apple, and topped it off with some blackberries.
I’m off to take the van in for an oil check, bird watch while I’m waiting and maybe walk up to TJ’s, which is right down the street. :)
