It's my favorite day of the week - football Saturday...War Eagle!!!! Dinner at Longhorn Steak House for Megan (sister) and David (brother-in-law) last night was interesting to say the least....lots of meat on the table and mounded on the walls. There was literally nothing on the menu that I could order...so I opted for the side salad and starved for the rest of the night. We woke up this morning and I had hunger pangs so I decided to cook breakfast. I rarely eat anything for breakfast besides coffee and on special occasions I will bake muffins. This is the fest I whomped up today....
Eggs: I diced and sauteed the leftover yellow, red and green bell peppers that I used in the vegetarian green chili from the other night. I used southwestern style Egg Beaters and poured over the bell peppers. Scramble the eggs and top with sharp cheddar cheese and scallions.
Cheese Grits: This is pretty self-explanatory....cook two packs of instant grits and add sharp cheddar cheese (as much as you want...I throw in about a hand full). I also add a splash of Louisiana hot sauce and fresh ground black pepper...like I said before, I love some hot sauce.
Biscuit muff: Pillsbury Golden Layer biscuits cooked in a muffin pan. It seems when I bake biscuits on a regular cookie sheet...the bottom of the biscuits always cook a lot faster than the rest. Ok, the bottoms are burned and we end up throwing that layer away. So, grease a muffin pan...add a biscuit and BAM - perfectly baked biscuit muffs...and they are cute too ;)
Meat: Jokes! This is actually Morning Star "fake" sausage and its excellent! I found the fake sausage in the freezer department of Publix so it was our first time trying it and definitely won't be our last. I cooked the sausage in a skillet....5 minutes on each side.
Coffee and ESPN Gameday finished out this breakFEST! Now, I'm headed out for a jog and then we are going to Megan and David's for the Bama vs. LSU game....David is a huge Bama fan so this should be an intense afternoon at the Cosby crib!
