I’m not complaining – this week can’t be over quick enough! Anyways, on to some eats.
I was oh-so-lucky to be the recipient of this beast last week:
After getting over the initial shock of how insanely ginormous it was (anyone else experience this? In my defense it does NOT look that big in pictures), and finding it a home atop our little fridge, I cracked out Ani Phyo’s Raw Food Essentials and got (un)cooking!
And lots of it.
So far i’ve tried kiwis, bananas, pineapples, apples and plums. Dried pineapple is definitely my favourite of the bunch but I’m not sure whether I’ll be drying out any more fruit. It’s good, but seems a bit pointless as it takes a while and I enjoy eating fresh fruit anyways.
Raw banana flax crepes:
I know they don’t look like much but they tasted insanely good. This particular one was served with yet more sliced bananas and almond butter.
Raw vanilla and chocolate macaroons:
Perfect way to use up leftover almond milk pulp.
Which I also used to make some of Ani Phyo’s amazing raw zucchini bread.
Pictured here in an open face beet and hummus sandwich, along with zucchini pasta with shredded carrots, avocado and basil and some of kale salad doused in some of Gena’s outstanding miso sesame dressing .
Believe me when I say this is the best dressing I’ve ever had. If you’ve never made a blended dressing before – let this be the first. Trust me, you won’t regret it.
Here it is again, pictures with another zucchini bread sandwich choc full of carrots, avocados, tomatoes and hummus.
I also tried my hand at some flax crackers;
Garlic and herb, tomato and garlic, and curry flavoured, from left to right.
And I wasted no time making my all-time favourite raw buckwheat granola.
Heavenly with almond milk,
Or atop some banana soft-serve with some green juice (celery, romaine, spinach, apples, mint, parsley and cucumber – yum.)
Seed and raisin snack ball-type things, perfect for fueling early morning runs.

Homemade raw vanilla almond butter,
I’m still in awe my food processor didn’t crap out on me. I’ve never been a fan of roasted almond butter, but this stuff is a-mazing. I’ll do a post on it soon.
But it’s not all raw,
I saw Sara ‘s recipe for chili yesterday and couldn’t resist making it for dinner, thanks to my recent discovery of TVP . It was delicious and made a huge portion – hello frozen leftovers!
My little raw food bender has been in part due to the new dehydrator and also due to the fact that I’ve been feeling slightly under the weather thanks to some horrible wisdom teeth pains and a subsequent cold. My teeth have been known to flare up from time to time, but never anything like this. I hardly got any sleep all of last week and some days all I could stand to eat were smoothies and soups. Being 21, not so much fun after all!
But dental issues aside, although I’m loving using my dehydrator to make things I never could before – it’s definitely a luxury, and not a necessity to eat a high raw diet. That said, I’m going to enjoy it while I can as I have no idea how I’m going to transport it with me wherever I move at the end of the year, especially if I end up leaving the UK.
