What are the key ingredients to bake VEGAN lemon poppy seed muffins for a light and moist result?

I baked lemon poppy seed muffins the other evening and they turned out way too dense, dry and heavy. The main reason is that I wanted to make a healthy version and I cut back on the coconut oil and sugar. I've recently turned vegan and I prefer not to use any egg or dairy products. If anyone has a great recipe to share with me, I'd throw a lemon poppy seed muffin party for you, too.

worked great!

Replace the sugar with 1/ 2 maple syrup half apple puree

Replace coconut fat with 1/2 organic cold pressed rapeseed/canola oil 1/2 soya yoghurt
