Warm Fall Spiced Baked Banana

Posted Oct 02 2011 1:07pm

As the weather begins to cool off (yes even in Florida) and fall approaches I find myself craving everything fall related like wearing my brown leather boots, drinking apple cider, and surrounding myself in the comforting fall aroma of cinnamon, nutmeg, and vanilla.

Today I found myself craving a fall dessert, pumpkin pie, apple crisp, basically anything warm with a hint of cinnamon.  However I didn’t have the time to make a big dessert or the will power to simply resist eating the entire portion, so I decided to create this recipe which is equally delicious, healthy, and a single serving portion!
This recipe is absolutely delectable and extremely simple to make (it only took 20 minutes to prepare and make), Plus it completely satisfied by craving for a fall flavored dessert!

Ingredients
1 large ripe banana
1 1/2 tsp of maple syrup
1 1/2 tsp of brown sugar
1/4 tsp of cinnamon
1/4 tsp of nutmeg
1/8 tsp of vanilla

Method

Preheat oven to 400

Begin by first gathering your ingredients

In a small mixing bowl add in maple syrup
Add in brown sugar and thoroughly mix together the maple syrup and brown sugar until you have a smooth consistency
Add in the nutmeg, cinnamon, and the vanilla
Using a spoon thoroughly mix together all ingredients until you have a smooth consistency and all ingredients are well blended, taste the mixture to make sure that it’s sweet and has a spicy taste without being too overwhelming
Using a knife make a slit going from the top of the banana all the way to the bottom (make sure your cut goes through the banana but not all the way through the back peel of the banana) Make a slight cut going lengthwise at the top of the banana by the stem
Gently pulling back the banana peel use your spoon to pour the mixture into the slit of the banana and on the sides of the banana
Place attached peel back over banana and cover with foil Let bake for 15 minutes or until banana is soft and warm and outside layer is blackened
Close your eyes and use your spoon to dig in to this warm, comforting, fall dessert making sure to savor the delicious taste as the warm banana mixed together with the spiced syrup mixture melts in your mouth!
This recipe is also quite versatile feel free to add whatever ingredients you desire or have on hand; adding a nut butter, chocolate chips, or chopped nuts would also make an excellent addition to this recipe. Serve with a side of vanilla ice-cream for an even more delicious dessert.
