We all have old standby's for meals. At our house it's "Burger-Fry Night"!
Fry patties (in smidgen of oil) and once cooked, layer on vegan cheese and wrap patty in 1/2 a tortilla (pictured). Cook on low until tortilla is toasty warm and cheese has melted. We prefer whole-wheat tortillas (check ingredients for no hydrogenated oils) to burger buns.... why fill up on bread when you have fries?!
Our household is split on burger preference. My husband and older daughter like Amy's California Burgers, and I usually have a tempeh burger or experiment with new veggie patties. Pictured is a "Mountain Veggie Burger", which was a little dry and spicy - no repeat purchase here.
I always make home fries, and they are easy! Slice potatoes (along with sweet potatoes as an option) into wedges or thick strips. Toss with olive oil, sea salt, transfer to a parchment paper-lined baking sheet, and bake for an hour or more at 400 degrees. I have variations of roasted potatoes and fries in both cookbooks if you want to mix things up! Also pictured is Mi-So Good Gravy! (p.72, The Everyday Vegan ) for dipping - an absolute must with home fries... tangy and mmmm-yummy!
