Vegan Whole Wheat Sweet Potato Gnocchi in a Brown Butter Rosemary Sauce (Recipe and Product Review)

Gia Russa Whole Wheat Gnocchi made with Sweet Potato Product Review + Recipe

 It's funny how things change, up until I was about 15 I hated grocery shopping, honestly it seemed like a fate worse then death ( and no I am not being dramatic....ok maybe a little). "I just need a few items my Mom would promise as she somehow cleverly coaxed me into going with her ( it was obviously she just wanted to around to guard her purse as she wandered through the aisles absentmindedly leaving her carriage to grab a few items off the shelf). Meanwhile an hour later after getting what seemed like a store worth of groceries we were on to the next store, gone for another hour as she examined rows of items that all looked the same to me. The whole going grocery shopping thing with my mom was a dreaded 3 hour process. "Are we almost done" I would complain, "almost" she reply which was really key work for another 30 minutes.

Once I finally was old enough to stay home alone, I would take every opportunity to bow out of going grocery shopping with my Mom. "I have a lot of homework, have fun through" I'd call out. I'd still be semi involved in the grocery shopping process as my Dad and I were responsible for helping my Mom unload the car once she pulled in the drive way, but that wasn't nearly as bad. Sometimes when I absolutely had to go grocery shopping with my Mom I would elect to stay in the car, hoping that would encourage her to pick up the pace, but after what seemed like an eternity of waiting, I'd usually end up being the one to surrender and go into the store to find her.

So who would of ever thought I'd grow up to love grocery shopping. In fact the other day I spent a good part of my day off, grocery shopping. I didn't go because I needed groceries, I went instead to browse. Browsing through the grocery store happens to be a particular hobby of mine! I love walking through all the aisles concocting new recipe ideas  in my head I examine new products I've never seen before.

I was doing just that when I entered the Pasta/Rice aisle at Publix. I was looking at all the variations of pasta when I came across Gia Russa Whole Wheat Gnocchi made with Sweet Potatoes, I was intrigued from the moment I saw the words gnocchi and sweet potato together on one package. I absolutely love gnocchi, a delicate potato dumpling with a rich Italian history. Looking at the ingredients I checked to make sure they were vegan, sure enough they were which was great seeing as I haven't had gnocchi in ages, most gnocchi served at restaurants are usually made with butter, eggs, or ricotta cheese.  Obviously this was a sign, I simply couldn't resist, so I bought them.

I'll begin by stating the Pros, this brand of gnocchi is stored in a sealed vacuum pack to ensure their freshness. I prefer this method of packaging compared to the frozen gnocchi which I believe to be of a lesser quality simply because  In my experience I have found the dough to be less fragile. Another definite pro is the fast cook time. Add the gnocchi to boiling water and within 3 minutes the small dumplings come floating to the top of the pot signaling they are fully through cooking. I also love the combination of whole wheat dough made with sweet potatoes, quite a healthy alternative to the standard gnocchi made with white flour and starchy white potatoes.These Potato gnocchi are delightful and delicate and easily absorb the flavor of any sauce, making for a delicious meal!

Now onto the cons, there is actually only one main con, the fact that these gnocchi did not have a distinct sweet potato flavor, I found this most disappointing as it was the sweet potato that first enticed me to try the particular type of gnocchi.

Walking in the door at 7:50 p.m. I found myself starving. I wanted a delicious healthy meal but simply couldn't stand the idea of taking the time to prep and cook a meal that would take any longer then 10 minutes. Desperately hungry I was quite tempted to simply bring out the hummus and pretzels and call it a night, luckily it was then that I remembered I had this package of Gia Russa Sweet Potato Gnocchi. I boiled some water In preparation for the gnocchi and made a simple warm brown butter rosemary sauce. I have to say this meal was probably one of my best yet and it only took a total of 15 minutes ( 12 of those minutes was the time it took to wait for the water to come to a boil). Definitely give this simple recipe a try for a quick week night meal.

Sweet Potato Gnocchi in a Warm Brown Butter Rosemary Sauce

1 1lb package of Gia Russa Whole Wheat Gnocchi made with Sweet Potatoes
4 cups of water
1 dash of salt
2 tbsp of vegan butter (I use Earth Balance)
1/2 tbsp of freshly chopped rosemary
1 tbsp of unsalted sunflower seeds
1/3 cup of thinly sliced sweet onion

 1) Begin by bringing a pot of salted water to a boil over medium high heat,once water boils add gnocchi and cook for 2-3 minutes or until gnocchi floats to the top of the pot, drain and set aside

2)In a saute pan begin your sauce, add in vegan butter over medium heat, make sure butter is completely melted before adding in onions

3) Once butter has a nutty aroma and onions  are softened add in rosemary and  sunflower seeds, let toast for 1 minute

4) Add  gnocchi to the saute pan and toss with the brown butter sauce

5) Dish out gnocchi and serve warm!
