Vegan Pandamonium’s Mushroom Bruschetta

Verdict: Yummy!

We had this for dinner tonight and it was so good and satisfying. You can find this recipe here:

So, I didn’t realize it till i finished but i used olive oil to saute the veggies instead of the earth balance. Whoops. But, i’ll be sure to try it next time. Also, we had Trader Joe’s organic lentil soup with it which was a perfect pairing! I think its funny that Luke asked me if he would still be hungry after dinner cuz it seemed so light of a meal. But, he’s sitting on the couch now and he seems very content. Wait. Hang on. I’ll ask him…. “honey, are u full?”… “yeah.”…. Ok. I think he’s full. I may do a run to Whole foods however to make him a yummy dessert! … hmmm, what should i make or bring?

In conclusion, Thumbs up on this one. You gotta make this one some time. Its crazy easy to make and so good! Thanks Sammi!! :)
