Coconut Curry Vegetables
Chop up some veges. I used turnip, carrot, zucchini and cauliflower. Mix one can of coconut milk with 1 tbs of Mae Ploy yellow curry paste pour that over the veges in a covered casserole. Baked for one hour at 400F. Stir and bake uncovered for another hour and serve hot.
1 cup rice 1 cup frozen veggies (I used the mixed veges, carrot, peas, green beans, corn) pinch of salt 2 cups water
