Vegan Carob Cupcakes {Peanut Butter Filled}

The other week, I was really in the mood for something chocolatey, though I didn’t have any chocolate in the house, only carob.  On the side of the carob tin was a recipe for vegan carob cupcakes with vanilla frosting.  Which, of course, got me thinking…  So I tweaked the recipe a bit and added a peanut butter filling.

Who says you can’t enjoy ooey-gooey fudge-like peanut butter filled vegan carob cupcakes {yes, I’ll admit I’ve eaten more than one at a time} for breakfast?  The amount of anything bad in these is negligible, and I for one, wouldn’t hesitate to have one any time of the day I pleased :)

I made 2 batches -the first time I used powdered sugar with the peanut butter for the filling and I baked it for 20 minutes.  It came out of the oven all nice and ooey-gooey, but as it sat and cooled, it lost a lot of the fudgy-ness.  The second batch I wanted to elliminate the powdered sugar, so I used pure maple syrup in its place – turned out just as good – I also baked it for less time – about 16 minutes, and then as it cooled, it was still more fudgy than the first batch, though both were best right out of the oven or else warmed up in the microwave for a few seconds.

These would be great with cocao powder, but I was working with what I had, but everyone has liked them so far who’s tried them! (Always a good thing!)

Vegan Carob Cupcakes {Peanut Butter Filled} (adapted from “Chatfield’s Vegan Carob Cupcakes with Vanilla Frosting” recipe on back of Chatfield’s carob) yields 12 cupcakes

1 C whole spelt flour

1/2 C oat flour

1 t NuNaturals NoCarb stevia

1/3 C Chatfield’s Carob Powder

1 1/2 t baking soda

1/2 t salt

1/3 C applesauce

1 t vanilla extract

1 C hot water

a chocolate bar of your choice (I used Vega Maca Chocolate bar)

2 T natural peanut butter

1-2 T pure maple syrup

Preheat oven to 350F.  Mix the dry ingredients together.  Add in the vanilla, applesauce, and hot water.  Mix well.  In a seperate bowl, mix peanut butter with maple syrup.  Put foil liners in pan (or spray pan instead – paper liners stuck very badly, so I don’t recommend them).  Fill with a spoon or two of batter. Put about a teaspoon or so of the peanut butter filling on top of each cupcake.  Then place a small piece of chocolate on top of peanut butter.  Cover cupcakes with remaining batter.   Bake for 15-20 minutes.

While I’m on the topic of food, I’ve discovered yet another granola bar – Awesome Bars .  These really do live up to their name, however!  The ingredient list is short, but they have a lot of flavor!  I liked them all, but my favorites are the blueberry almond and salty peanut.  I think these go in my top 5 bars for sure! (they beat out Lara bars and tie with Luna, which I love, so that’s saying a lot)
