I was always told that you always want your final piece in a recital or concert to be the best, because it is the final piece the audience hear. They will remember it good or bad. The same is true in food. If there is one thing you want your guests to remember, it is the dessert. Hopefully they will remember a great dessert rather than one that is subpar.
I am certain my guests will remember this dessert. I sure did!
6 ripe dessert pears 3 vanilla beans 2/3 agave nectar 1.5 c. apple juice large pinch of saffron vegan ice cream, to serve
1. Using a small sharp knife, carefully split the vanilla beans in half. Scrape the seeds into a pan large enough to hold all of the pears. Then add the vanilla beans as well. 2. Pour the agave syrup and apple juice into the pan. Also add the saffron. Bring the mixture to a boil. Reduce the head to low and simmer, stirring occasionally. 3. Peel the pears, then add to the pan and gently turn in the syrup to coat evenly. Simmer for 15 minutes, turning the pears halfway through cooking until they are tender. 4. Transfer pears to a serving bowl with a spoonful of the syrup. 5. Serve warm with vanilla bean ice cream.
This was one of the best desserts I have had in a LONG time!
