Traditional Pizza made with Fresh Tomato Sauce

Sometimes the simplest dishes are the most delicious. Like the pizza I made today, a traditional pizza made with a fresh tomato sauce, mozzarella sprinkled with a blend of delicious herbs. Now don't get me wrong, I love creating and concocting fun new recipes, but it's important to sometimes remember to return to the basics. Using only a few ingredients is sometime the key, that way you can truly taste and appreciate the wonderful flavors of the ingredients your using.

This is a truly delicious, easy and healthy pizza. Rather than using dough I used a tortilla ( La Tortilla Factory Smart and Delicious Tortilla , only 100 Calories), not only does this cut back on preparation time but it also cuts back on calories. This is a perfect individual size pizza, a perfect way to satisfy your cravings.

Luckily I had extra tomato sauce which I had saved and frozen, so I simply took it out and let it thaw, but trust me making your own sauce isn't as hard as it seems and the delicious end result is positively worth it. However, if you absolutely have no time feel free to buy your sauce, make sure your using a sauce that has very few ingredients (the fewer the better)Try using a can of crushed tomatoes, add in 1/4 of olive oil, 1 tbsp of tomato paste, 1 tbsp of crushed garlic and 1 tbsp of herbs of your choice (parsley, oregano, and basil add a great flavor to the sauce). stir together and let simmer for 10 minutes or until are ingredients are well mixed and sauce is warm.

Note the following recipe for sauce makes about 3- 4 servings

Ingredients for Sauce
5 Vine ripened tomatoes (make sure they are soft)
Half of a sweet onion chopped finely
3 cloves of garlic finely chopped1/4 cup of carrots shredded or pureed2 tablespoons of extra virgin olive oil1 tablespoon of tomato paste (the only thing in this recipe that comes from a can)oregano, parsley basil (using fresh herbs is preferred however, dried herbs are also an excellent substitute)Salt and pepper (use as needed to season sauce)


MethodBoil water on medium to high heat. When making tomato sauce it is very important to remember to skin tomatoes, otherwise the skins become tough in the sauce leaving a less than enjoyable taste. I have found the easiest way to do this is to simply place tomatoes in a pot of boiling water for no longer than 1 minute

Immediately pour tomatoes and boiling water into an ice bath, to stop them tomatoes from cooking. Doing this will also help you to easily peel skin

Add olive oil to a pot and saute garlic and onions over medium heat Add in carrots and continue to saute 
In the meantime peel the tomatoes and discard skins. Cut tomatoes into quarters and squeeze out seeds(warning this part can get a bit messy).
Once tomatoes have been cut and cleaned of seeds add the tomatoes to the olive oil, garlic, onions, and carrots

 Using a fork gently squeeze down on tomatoes to flatten. As tomatoes continue to cook the sauce will become less chunky as the cooked tomatoes omit liquid. Add in tomato paste and stir it into tomato mixture. Sprinkle mixtures with herbs of your choosing (I used parsley and oregano, adding chopped basil will also add a delicious flavor to the sauce).

Let sauce come to a boil and then immediately let simmer for approximately 30 minutes. Add Salt and pepper as needed.
Feel free to puree sauce once done if you prefer a smoother texture. I prefer a chunkier tomato sauce so I usually leave it as is.

Ingredients for Pizza1 10 inch whole wheat tortilla ( I use la Tortilla Factory Smart and Delicious , but any brand will do)3/4 cup of tomato sauce1/4 of Vegan Mozzarella Cheese 1/4 tsp of garlic powder1/4 tsp of oregano (plus more to garnish)
1/8 tsp of red pepper flakes 1 tsp of olive oil2 sprays of fat free cooking spray
Begin by preheating oven to 350
On a greased baking sheet place tortilla

brush with olive oil and sprinkle with garlic powder, oregano, and red pepper flakes

let bake for 5 minutes until tortilla is crispy and slightly browned

Once tortilla is browned ladle sauce over the tortilla

sprinkle on cheese

bake for 5-8 minutes or until cheese is completely melted.
Let cool for 3-5 minutes and sprinkle with additional oregano

  You might find eating this pizza a bit tough, I suggest using scissors to cut slices.
