Tofuevos Rancheros And Deep Dish Pizza

Since it’s Saturday I’ll be brief, but I do have a few yummy photos to share.  For brunch today, I made tofuevos rancheros from the upcoming Hearty Vegan.  This is a dish I’ve seen on a lot of vegan menus, and in fact, Chris ordered a dish of the same title from Handlebar in Chicago .  He said this recipe was better, and I have to agree.  It still has a lot of heat, but a more pleasant heat, and the tofu was seasoned and mashed rather than the large chunks in the restaurant dish.  Don’t get me wrong though, Handlebar rocks!

I spent what felt like a large chunk of time working on dinner, also a Hearty Vegan recipe.  I have to say though, this deep dish pizza is more like a work of art than a meal.  I was so proud of the presentation!  Now if only I’d served it to people who cared about the presentation, rather than my husband and a hungry toddler, but that’s okay; I like to try to impress them too!

This monstrous pizza was filled to the brim with onions, mushrooms, homemade ground pepperoni, homemade vegan mozzarella, and marinara.  Oh yeah!  And despite it being only a 10 inch pizza, there are plenty of leftovers to go around.  I guess this is the kind of pie they’d have to put on the menu in dimensions rather than diameter!
