The Last Tastes of Summer

I love Sundays...they are so relaxing. I got up late and took my time making breakfast. I craved something savory so I made a Tofu Scramble with Gimme Lean Sausage. I also had some thawed frozen blueberries and a cornbread muffin with apple butter (so good!) It was a big breakfast but I figure I can splurge on the weekends.


I was going to make a chick'n patty for lunch but decided to wait until school lunch because it would be a lot less messier than this...

I call it a Sloppy Seitan Sandwich-BBQ Style. I marinated some seitan in the Apricot BBQ sauce I made a while ago and while that did it's thing, I sauteed some mushrooms and onion. Then I added the seitan and cooked it until the sauce was a thick glaze. I added it to some ezekiel bread with baby spinach and red bell peppers. This sandwich was SUPER messy! I had it all over my hands, but it was oh so worth it =) I used up the last of the BBQ sauce so I'll have to go to the store to get some more apricots...I don't think I can go back to regular BBQ sauce! Apricots are going out of season soon too.

For dessert I made a Carob-Chip Cookie based onCeline's recipe. I love how this recipe only makes 2 cookies, great for when you want a quick small snack without all the hassle of making a huge batch and feeling guilty because you then ate the whole batch yourself hehe. I used carob chips, no pecans, and agave instead of maple syrup. I also had way more than 3 of those super ripe strawberries...like almost the whole carton. I hate sour strawberries so I couldn't believe how sweet and juicy these were. Ahh a luxury of summer and so good.
