Recipe: Pumpkin Oatmeal Cookies
Ingredients:
2 cups whole wheat flour
1 1/3 cups rolled oats
1 teaspoon baking soda
3/4 teaspoon Celtic sea salt
1 tsp cinnamon
1/2 teaspoon nutmeg
1 2/3 cups date sugar
2/3 cup coconut oil
2 tablespoons blackstrap molasses
1 cup cooked delicata squash
1 teaspoon vanilla
1 cup walnuts, finely chopped
You can find the instructions for these cookies at the Post Punk Kitchen. I modified a few of the ingredients and it all turned out quite well. They came out a bit overdone on the bottom when I baked them for the recommended time, but they don't taste burnt...so overall, an excellent return to the world of baking. They also have a very "fall" flavor, which is appropriate now that it's officially fall.
This weekend was the first time I had baked anything in months.I had been struggling toeat an entirely raw diet and finally decided to add some cooked food back in. I think there is something to be said for the psychological satisfaction in eating cooked food, especially when you make it yourself. I found I was rather unhappy giving up cooked food and began to resent the food I was eating. I finally realized that there was no sense in consuming resentment, so now I am striving to eat with contentment and joy, whether raw or not.
