It’s no secret I love my bread machine. Sure, making bread by hand isn’t much more difficult and can but fun, but I think somehow the bread machine fulfills my childhood desire for one of those fancy Easy Bake Ovens. Those commercials made it look so cool didn’t they?! You’re just chillin’ in your room, giving Barbie a bad hair cut, chowing on platefuls of sugary frosted baked goods fresh from the ol’ Easy Bake. Sure I had plastic play food, but this was the real thing! I could be completely self-sufficient in my room turned adult-free apartment with my fabulous pink oven. I didn’t get an Easy Bake, but I’m still pretty certain that’s how it would have gone. ..
One word that is a surefire way to get me to click the “Share” button on nearly anyone’s vegan recipe? (You can find those shared posts in the sidebar to the right.) Let’s all say it together. PUMPKIN! When I came to The Domestic Vegan’s recipe for vegan Spiced Pumpkin Yeast Bread , I took it one step further, ran straight to the bread machine, and made myself a loaf!
This is simply a fantastic bread recipe! I’m sure I don’t even have to tell you how it makes the kitchen smell absolutely delicious while baking. My loaf ended up with the perfect texture- soft, and fluffy with a nice bite, and yet dense enough to easily slice without it falling apart. I made Jessica’s recipe exactly as written, including the 2 cups white flour and 3/4 cups whole wheat flour, except replacing the allspice and cloves with pumpkin pie spice. I didn’t have allspice or cloves, and since they’re both in pumpkin pie spice, I figured it couldn’t hurt in such a small amount. If you have a lonely bread machine, I highly recommend hopping over to The Domestic Vegan for this amazing bread recipe.
And do you know who else loves pumpkin raisin bread? Apparently the bees! I was just holding the plate to snap a photo and this guy decided to check out the terrain.
