This winter pasta dish is simple and quick to make. It's full of healthy and sweet winter vegetables. My kids love it.
The sauce is made by first frying the onions with a large clove of pressed garlic. Then add passata and tomato pieces out of a can, together with some Oatley or other vegan cream. The passata I use is this wonderful organic passata (la Bio Idea). I add a little shoyu sauce and mirin (or use another wine) to the sauce.
In the meantime you are steaming the vegetables in another pan. I use winter carrots, savoy cabbage, and pumpkin. When this is steamed soft, add it to the tomato sauce. Sprinkle Italian herbs, thyme, salt and pepper. Eat the sauce with tagliatelle and garnish with parsley.
