Sweet Fig and Walnut Oatmeal Cookies

 So I was going through past posts when suddenly I found a ton of old recipes that I had completely forgotten about, so I decided to post them now for you all!

 From what I remember these oatmeal cookies have a delicious  sweet fig flavoring, they're soft, chewy, and they have a wonderful cinnamon spiced flavoring.

Now the challenge will be creating a paleo friendly cookie that has the same delicious taste and texture...looks like i'll have my work cut out for me!

Yield: 36 cookies
Ingredients
3 cups of rolled quick cooking oats1 1/2 cup of flour1 tsp of baking powder1/2 tsp of baking soda1/2 tbsp of cinnamon1 tsp of ground nutmeg3/4 cup of vegan butter1 cup of brown sugar1/2 cup of maple syrup1 tsp of vanilla extract 2 egg replacers ( 2 tbsp of flax eggs and 6 tbsp of warm water, let sit for 2 minutes)1/3 cup of applesauce3/4 cup of fig spread ( click here for recipe) 1/2 cup of chopped walnuts
Method1) Preheat oven to 350, In a large bowl mix together all dry ingredients ( oats, flour, spiced, baking powder, and baking soda)
2) In a separate bowl creamy together butter, sugar, maple syrup, vanilla,egg replacers, and applesauce)
3) Add wet ingredients to dry ingredients and mix together, you should have a thick batter, fold in chopped walnuts, and  mix in fig spread
4) Drop cookie on a parchment lined cookie sheet and bake for 15 minutes or until cookies are lsightly browned and baked through
5) Let cool  for 2-5 minutes and enjoy these delicious cookies warm from the oven!
