The weather yesterday was absolutely beautiful and the forecast is perfect for this week, perhaps summer has arrived…and it has been long overdue!
One of my favourite parts of summer is eating outside, and I indulged in a bit of this yesterday with some yummy summery food. I went to the local farmers market yesterday, always the start of a perfect Sunday. I did not pick up too much as I am going away on Thursday, so I just got some butternut squash, some very pretty green and purple kale and best of all a load of falafel. Having tried masses and masses of falafel over the years I am convinced that the stand at my local farmers market has the best falafel…bonus: they are massive, and they are really cheap! So I always make sure to stock up when I am there. I put some of it to good use:
Mixed Leaves, Spinach, Beets, Green Olives, Avocado, Falafel topped with tahini, my new fave topping. I am addicted to a dash of tahini on anything…falafel, veg burgers, roasted veggies.
The salad was delicious, I love nothing more than eating a massive salad in the sunshine. I love it almost as much as I love having a smoothie in the sun:
Raspberry Banana Smoothie
Sunday’s simple smoothie involved 1/2 frozen banana, soy milk and a handful of raspberries. It was perfect for a lazy afternoon in the sun.
