If you have Simple Little Vegan Slow Cooker , I definitely recommend adding “Bacon” Lentil Soup (page 73) to your to-make list. Unfortunately, I’ve had two major flops from this cookbook recently, Cream of Potato Soup (page 61) and Butternut Squash Soup (page 72). My potato soup turned into something closer to grainy, burnt mashed potatoes, and my squash soup was just very thick and bland without a lot of doctoring. But the bacon lentil vegan soup recipe made up for both those with tons of flavor and hearty, filling lentils. I can’t even say I’m a huge fan of veggie bacon, but it was just fantastic in this soup!
I didn’t get a chance yesterday, but I also wanted to share a couple of Halloween pictures. I know it’s not vegan food, and I’m trying to do Vegan MoFo justice here, but I’m so proud of my little Cat in the Hat! He loved dressing up and getting the whiskers painted on his face. I’m almost certain while I was painting him was the stillest he’s ever been. His aunt and grandma each put together wonderful vegan Halloween treat baskets for him, filled with Yummy Earth Organic Lollipops, Annie’s Bunnies, Clif Bars, a Buzz Lightyear toothbrush, a few fun long sleeved t-shirts, a fleece jacket, and lots of other little things. It just goes to show you a vegan kid can bring in just as nice of a haul on Halloween as any other little trick or treater!
