Meals around here on week nights are about as simple as you can get. You can’t go wrong with simplicity!
Monday: Spicy Stir-Fry with a baked vegetable egg roll. I don’t usually like egg-rolls, but suddenly had the urge for one. Weird.
The stir-fry included all veggies that were about to go bad in my fridge (with the addition of a pepper). Asparagus, carrots, red pepper, onion, mushrooms, and chopped spinach. It was yummy!
Tuesday: Whole wheat spaghetti with a mushroom pasta sauce and roasted asparagus.
Clearly, the asparagus was my favorite part. Did you really think otherwise?
Lunch tomorrow is lookin’ real good!
