This is a delicious salad that keeps well in the fridge.  It's great to round out a meal or as a quick snack.  The dressing is thickened with chia seeds and is very low in fat/calories.

Sesame Ginger Edamame Salad

  • 1/4 cup minced red onion
  • 4 tbsp toasted sesame seeds
  • 4 tbsp nori shreds
  • 2 tbsp chopped cilantro

Dressing:
  • 2 cups chickpea cooking liquid (or water)
