Seasonal Flavors

I have been wanting to make this for breakfast for weeks but I kept putting it off or forgetting. Finally this morning I made theFrench Toast SoufflefromDiet, Dessert, and Dogs. I quartered the recipe and just used 2 slices of ezekiel bread. I also didn't bake it for the whole time, I took it out because I was so hungry and it ended up being all gooey and delicious. I topped it with yogurt and cinnamon. This was really good and the berries reminded me of summer :)

I changed seasons for lunch and went for a more fall flavored meal. I made the Quinoa ChickpeaConfetti Casserole from ED& BV and put in into a roasted Acorn Squash. For the casserole I used 1/2 cup of millet, 1/4 cup quinoa, and zucchini instead of fennel. Mmm, all the spices in the casserole were amazing and so bold against the mellow flavor of the squash. Even though I halved the casserole recipe, it made TONS so I have plenty of leftovers for more delicious meals throughout the week.

Tomorrow I'm going shopping for winter clothes! Since I moved I haven't been shopping and I have no winter clothes anymore. I wasn't expecting to come back so I got rid of most of my stuff. I'm so excited as I haven't been shopping in forever but I'm also nervous. I don't like trying on clothes of looking in those horrid mirrors in the dressing rooms. My big problem is finding jeans. I can never find any I like and none are small enough to fit me. Maybe because I have been eating more I can fit into normal sized jeans...I don't like the thought of gaining weight but I guess it will be easier to find clothes that fit me.
