Scrimpy Livin' Week 3: Just the Staples

It's Time for Awesome! This is it, everyone! The week I have finally been waiting for! I met my challenge for spending around $30 for a week's worth of groceries for Chris and I. And it only took me getting the flu and not being responsible for making dinner to do it! Hahaha!

But to be fair, our trip to the grocery store for Week #3 was for staples only. I haven't mentioned it yet, but we've probably only eaten two of the packaged meals to go that we bought at the start of all this. Lunch typically consists of leftovers from dinner. And I love it!

I should also mention that this was the week I was incapacitated due to flu; I ate three times a day from Wednesday to Saturday, but I didn't snack and spent most of my time sleeping. And I have to say all of this saving money by cutting back on food came in handy when I had to spend about $200 on going to the doctor and buying prescriptions and medicine. Not to mention the money I lost from being out of work for two and a half days as I started my current job in September and don't qualify for sick time until March. Ugh! But I digress. Here's our list from this past Sunday. Grocery List
Puffins cereal
All-purpose flour
16 oz. Mexican stewed tomatoes
Newman's Own pasta sauce
16 oz. dried black beans
12 oz. tri-color rotini
1 lb. fresh green beans
Kale (x2)
Fresh cauliflower Shallots
Apples (x4)
Green peppers (x3)
Sweet potato Total: $24.59
Now that is pretty stellar. I do have to admit a few things, though. Firstly, we carried over some ingredients from the weeks before, obviously. Then there's the fact that our checker rang us up wrong twice. For instance, there are salad tomatoes on my receipt, but we didn't buy any of those. I added sweet potato to this list here because I'm pretty sure it was supposed to be that. She also charged us for zucchini while she was scanning our merchandise, which we didn't get, and we had to go back and get her to remove it, twice. So, that might be contributing something to my most awesome and excellent total, but I have my doubts. Week 3 Menu

  • Black Bean Loaf with Green Beans
  • Black Beans and Rice (from a Better Homes & Gardens Cookbook) with Cornbread
  • Vegetable Biryani (from Vegan Slow Cooker ) and Garlic Yogurt Naan Griddle Bread (from Vegan Eats World )
  • Tofu Scramble Tacos with Black Beans
  • Leftover Lentil Soup (from Week 1)

The Black Bean Loaf was my favorite main dish of the week with the Garlic Naan taking the spot of favorite thing from the week ever. In fact, I think I may have some in a minute for a snack. This was the first recipe I tried from Terry Hope Romero's  new book. I am so looking forward to trying out the rest!

Believe it or not, we're still living off of the bread I made in Week 1. The second loaf of French bread is what's left and I have about half of it still. I'll probably make more on Sunday. Sunday seems to be my bread making day! I'm really having a great time with this experiment. And now that I've gotten into the habit of making beans and grains ahead of time, I'm starting to add regular dishes back to our menu.
