Roast fruit for honey-like syrup

 
 

For a honey-like syrup without the cruelty, try roasting fruit! Cut open a stone fruit, like peaches, nectarines or plums. Place skin up in a baking dish and slowly roast at around 300 degrees. You don’t need to worry if the fruit itself is shriveling up – we’re dealing with the yummy juices here. You can add a pinch of cinnamon if you like. Keep checking every 10 minutes until you have the rich, flavorful syrup you desire. Refrigerate.

Mmm...that sounds so good.  Agave nectar is also very good for a honey-like sweetness and consistency.
 
This is a great idea.  You can have a high-end IHOP in your own kitchen!
