This is a simple recipe which I made when I became a vegetarian many years ago. I used vegetarian cheese then. Now I tryed them with vegan cheese, and I must say that I like them even more so!! There is a photo of the vegan cheese I used in my recipe for cream cheese sauce (see below).
To make this cook brown rice (volkorenrijst) until the rice becomes soft and sticky. I use the short grain type of brown rice, which becomes sticky when cooked longer. While the rice is cooking, place onion in the food processor to be chopped finely. Fry this in oil until soft. When the rice is done and still hot, add the vegan cheese which will melt into the rice while mixing. Also add the onion, a pinch of nutmeg, mexican or other spice, salt and pepper. The rice should be sticky now and ready to form into croquettes. Place a generous amount of whole wheat bread crumbs onto a plate, and cover the croquettes with the bread crumbs. Fry them in oil until crisp.
