Raw Walnut-Salsa Taco Salad

Walnut-salsa served over lettuce and garnished with pepper cheeze sauce, fresh chopped tomatoes, onion, olives and avocado.

Here is another wonderful raw meal that is perfect for hot summer evenings.

Walnut-Salsa (meat alternative)

1 cup raw walnuts, soaked overnight then drained

1/3 cup chopped tomatoes

¼ cup finely chopped onion (or to taste)

fresh cilantro, to taste

¼ tsp. garlic powder

1/2 TB lime juice (or lemon)

½ tsp. ground cumin

½ tsp. herbamare or sea salt

½ tsp. oregano

1/3 cup fresh corn kernels (mix in after blending)

dash of raw cocoa powder

dash of chili powder

dash of smoked paprika

agave nectar to sweeten, optional

Put walnuts and chopped vegetables in food processor and pulse about five times.

Add the remaining ingredients – except the corn -and continue to process until well mixed.

Taste and adjust spices as needed.

Mix in the corn kernels by hand.

You can eat as is or dehydrate to dry it a bit.


Spicy Pepper Cheeze

1/2 small orange bell pepper, cleaned and chopped

3 TB nutritional yeast

½ cup raw cashew pieces, ground well

1/2 tsp. each of the following: onion powder, garlic powder, sea salt (or to taste)

¼ - ½ tsp. apple cider vinegar

red cayenne pepper or red pepper flakes to taste

small amounts of water to blend – you want the cheeze thick

Combine all ingredients and blend until smooth. Use small amounts of water to help turn blades but keep the mix thick.
