I usually stumble home from spin class around 12:30, at this point I am starving, about to eat anything – I am at my weakest. After a rigorous workout I am most vulnerable to empty calories and carbs. I need a healthy protein packed meal – stat! At least twice a week, I make my Happy Vegan Salad or Chickpea Salad , but today, I reached for broccoli and quinoa pasta. I assume most of you are familiar with broccoli and its nutritional values (powerful source of veggie protein, iron and fiber). For those of you who have never heard of this powerful little seed, here’s a few highlights. Commonly mistaken as a grain, (and often referred to a ‘super-grain’), quinoa is actually a seed. It is also gluten-free; packed with loads of protein, calcium, iron and vitamins, making this tasty seed one of the world’s most healthiest foods. You can find it in your local grocers in various forms, from uncooked seeds to premade pastas. Hint: Some grocers over-charge for this, I even saw it at a Super-Target for $12.00 a bag! Outrageous! Its normally around $2.95-$4.95 and yeilds approximately 4 cups.
Nothing better than a fresh glass of cucumber and mint infused water. In the morning, fill a glass container of water, ice, sliced seedless cucumbers and mint. Keep it steeping in the fridge until ready to use. You’ll be surprised at how addicting it is.
1 package of quinoa pasta (we like the Ancient Harvest brand)
1 package or 25 red grape tomatoes
1 head fresh broccoli
1/4 cup Daiya cheese
1/4 cup of your favorite Italian dressing (if you dont have any, use oil and vinegar)
Cook the pasta as package directs, rinse with cold water and drain.
Slice the tiny tomatoes in half.
Chop the broccoli.
Top with Daiya cheese.
Serve with a side of Italian dressing for drizzling.
