Orange & Poppyseed Cupcakes

A couple of days ago, i was looking for a cake mix to make a cheesecake for my bf. I am always checking product ingredients to find things without animal products - it always seems like quite an accomplishment when i do!

Anyway, i came across an orange and poppyseed cake mix. Instead of making a cake i decided to make cupcakes, mostly because i wanted to know how many calories i was eating per cake- which if the mix is divided between 10 cupcakes, minus the reccomended 2 eggs, is about 200 calories per cupcake!

The actual mix and icing don't contain animal products, but the ingredients they suggest to add include milk, eggs and butter. I had never used a packet cake mix before, so wasnt sure if my animal product substitutes would work-but they did! I used rice milk, Not egg and nuttlex non-dairy spread.

I found the mixture was a little runny, i think due to the lack of egg, so i added extra flour, about 1/4-1/2 a cup of self-raising. Also, because they were in individual cupcakes they need less cooking time than a cake- mine were done in 20-30 minutes.

The cupcakes were possibly the best i've tasted, they were amazingly soft and moist. I topped them with the supplied icing and some orange zest.

I will deffinately be making these again! Perfect for afternoon tea...or should i say afternoon coffee :)
